Strawberry coconut vegan chocolate mousse

This delicious super creamy strawberry coconut vegan chocolate mousse has only 7 ingredients and it takes less than 10 minutes to make. It’s of course vegan and has no refined sugar. The prime ingredient, raw cacao is a great source of antioxidants, iron and magnesium. Because it is raw, it is also bitter in taste, which can aggravate Vata dosha. So adding spices like cinnamon and cardamon can take away from the bitterness and balance out the taste. Also adding fresh strawberries in the mix, which are naturally sweet will contribute to this. I chose not to use any other sweetener because the spices and strawberries are enough, although it definitely does not taste super sweet, you can indeed still taste the bitterness. So if you would like it a little sweeter you can add some stevia or coconut sugar. For the coconut cream, I used a bio, organic and raw coconut cream. This delicious thick cream is high in fibre and healthy fats which make it a nourishing food. It is especially good for Pitta dosha.

A quick and easy tasty vegan dessert to enjoy.

Ingredients:
2 tbsp coconut cream
1/2 mug unsweetened coconut milk
1 tbsp cinnamon
1/2 tbsp of cardamon
3 tbsp raw cacao
1 tbsp desiccated coconut
Handful of strawberries (I used 6 in the mix and 2 for the topping).

Preparation:
Add all the ingredients to a blender. Mix until it becomes creamy. Then add the blended mixture in a small bowl. Serve with extra strawberries and sprinkle some more desiccated coconut on top if you’d like.
